We can call this a recipe for “healthy fast food”, because it does not require too much preparation and only takes minutes to prepare. Among all the other squash recipes, this one takes the least time.
2 small pieces of cream cheese
Salt, pepper and spices to taste
Choose the lightest squash first, as they are the tenderest.
Then wash them and cut them into small, even pieces.
Cut the cheese into cubes and mix it with the egg in a bowl.
Now add salt, pepper, oregano or whatever type of seasoning you prefer. Don’t forget to add the squash!
Once everything is mixed together, heat in the microwave for no more than five minutes and you’re done!

To start, cut the squash into strips about half a centimeter thick and then salt each one and leave them for approx. 20 minutes.
Meanwhile, in a separate bowl, beat the eggs with the spices.
In addition to salt, you can add pepper, oregano, thyme, parsley, cumin or any other spice you like.
Coat each strip of squash in the egg mixture and then the breadcrumbs or flour and shape them.
Finally, fry them in plenty of oil or, if you prefer a healthier version, you can put them in a frying pan and roast them in the oven.
When the breadcrumbs turn golden brown, they are ready.

1.3 kg squash
1 clove of garlic
2 teaspoons of oil
3/4 of a block of butter
1 liter vegetable soup stock
2 cups of rice
3 teaspoons grated cheese
Salt, pepper, parsley, oregano, etc.
Cut the squash into small cubes and fry with oil, garlic and spices.
In a separate pan, lightly fry half of the butter together with the onion, add the rice and fry for about a minute.
Then add the soup stock, season with salt and pepper and cook until the rice is done.
When the liquid has evaporated, add the rest of the butter, grated cheese and roasted squash.
There is nothing more than that! Serve it warm, and if you like, add a little more cheese on top!
